The Foods That Moved

Almost nothing on the modern plate is native to where it is now famous. The largest reshuffling of crops in history moved food between continents, created several of today’s biggest commodity markets, and left others as staples no exchange has ever priced. It also took a great deal longer than anyone remembers.

Corn, potatoes, tomatoes, cassava, chocolate, chili, and vanilla are all American crops that most of the world did not taste until after 1492. Wheat, rice, sugar cane, coffee, and bananas are all Old World crops that did not reach the Americas until Europeans carried them there. The two lists are halves of a single event, the biggest deliberate and accidental transfer of plants, animals, and people the planet has seen, and the historian Alfred Crosby gave it a name in 1972: the Columbian Exchange. Every supermarket is a monument to it.

For a book about markets, the interesting question is not just what moved, but what the movement made. The exchange built the modern soft-commodity complex: sugar, coffee, cocoa, cotton, and later rubber and palm oil became globally traded because the exchange planted them on colonial plantations and wrapped shipping and finance around them. At the same time it moved the crops with the largest effect on human population, the potato, maize, and cassava, and most of those stayed un-financialized staples, eaten close to where they grow, with no futures market to this day. The same reshuffling that fed billions also decided which foods would get a ticker and which never would.

Which way each crop travelled

The popular story runs one way, from the Americas to Europe, because that is the direction the foods people find surprising came from. But the traffic was two-way, and some of the biggest surprises are the crops going the other way. The clearest example is sugar cane. Cane originated in New Guinea and South Asia; Columbus himself carried it to the Caribbean on his second voyage in 1493, and the plantation economy that grew from that one Old World grass, and the Atlantic slave trade that fed it, reshaped the Americas more violently than any American crop reshaped Europe. Coffee is Ethiopian, spread through the Arab world, and only became the drink of Brazil and Colombia after Europeans planted it there. The Americas gave the world its stimulants and starches; the Old World gave the Americas its grains, its sugar, and its livestock, since the Americas had almost no large domesticated animals before contact. The horse, which remade the culture of the Great Plains, was an import.

Fast to move, slow to eat

The seeds crossed the ocean quickly. Within a few decades of 1492 the new plants were growing in European, African, and Asian gardens as curiosities. What took a very long time was adoption, the shift from botanical oddity to something people actually build a diet on. The gap between arrival and staple status routinely ran one to three centuries, and the population booms that people casually pin on 1492 are really an eighteenth- and nineteenth-century adoption wave.

The potatois the clearest case. It reached Spain from the Andes around the 1570s and was then distrusted for roughly two hundred years: it grew underground, it belonged to the suspicious nightshade family, and it appeared nowhere in scripture. It did not become a staple across northern Europe until the late 1700s and 1800s, often pushed by governments and famine, and Ireland’s dependence on it is exactly what made the 1845 blight a catastrophe. The tomato, another American nightshade, arrived in the 1500s and was widely believed to be poisonous; Italians did not cook with it much until the 1700s, which means the tomato-and-pasta identity everyone treats as ancient is only about two hundred and fifty years old. Maize moved faster, because it slotted into existing grain-and-feed systems, and in China maize and the sweet potato let farmers plant dry hillsides that rice could not use, helping fuel the Qing population explosion. Even there, the effect arrived generations after the plant did.

Native to nowhere

The strangest legacy of all this is that the foods people treat as national emblems are almost always immigrants, and often the names give the confusion away. The turkey is a North American bird, yet the English named it for Turkey, the French call it dinde, from d’Inde, “of India,” and the Turks in turn call it hindi, also “India.” Everyone pointed the compass at somewhere else. The “Irish” potato is Andean. “Swiss” and “Belgian” chocolate is made from a Mesoamerican bean that grows nowhere near the Alps. Italian tomato sauce, Thai and Sichuan and Indian heat, the British chip: all are built on crops that were somewhere else entirely five hundred years ago. In the modern kitchen the ingredients are, in a real sense, native to nowhere. They belong to the cuisines that adopted them, not the places they came from.

The single best counter-narrative is chili. The searing capsaicin heat that defines Indian, Thai, Sichuan, and Korean cooking is treated as timeless and Asian, but the chili pepper is American, domesticated in Mexico and Bolivia, and it only reached Asia after Portuguese traders carried it east in the 1500s. Before that, “spicy” in India meant black pepper, long pepper, ginger, and mustard, pungent and warming but not chili-hot. The adoption this time was fast, roughly a century to become inseparable from those cuisines, one of the quickest and most complete transfers in the whole exchange, which is precisely why nobody remembers it happening.

How France was tricked into eating the potato

The potato’s two-century image problem was beaten by a marketing campaign. Antoine-Augustin Parmentier, a French pharmacist, survived as a prisoner of war in Prussia on a potato diet and came home convinced it could end French famine, against a public that thought the tuber caused disease. He staged elaborate dinners built entirely around potatoes for guests including Benjamin Franklin and the chemist Lavoisier, and got the king and Marie Antoinette to wear potato flowers. His shrewdest trick was reverse psychology: he posted armed guards around a field of potatoes outside Paris by day, signaling the crop was precious, then quietly withdrew them at night so local peasants would sneak in and steal the tubers to plant themselves. Frederick the Great had used the same guarded-field ruse in Prussia after ordering peasants to grow potatoes in 1756. Two of Europe’s most important staples spread not because people were hungry for them, but because they were made to look like something worth stealing.

Most rows run from the Americas outward, the direction people find surprising, but sugar cane and coffee ran the other way, and rubber made a later, deliberate jump from Brazil to British and Dutch Asia. The “lag” is the rough gap between a crop arriving and becoming something people there actually depend on.

Which moves became markets

Here is where the food history turns back into a markets story. The exchange sorted the world’s crops into two very different commercial fates, and the sorting rule was mostly about what could be grown for export and shipped rather than eaten locally. The crops that became plantation cash crops, grown in one climate for sale in another, turned into the great traded softs: sugar, coffee, cocoa, and cotton are the heart of the ICE softs complex today, and rubber and palm oil joined them later on Asian exchanges. None of these is eaten as a staple where it is grown; all of them exist as global markets because the Columbian Exchange made them export goods first and foods second.

The crops that reshaped human population went the opposite way. The potato in Europe, maize and sweet potato in China, and cassava in Africa were adopted as local staples, grown and eaten in the same place, cheap, heavy, and perishable, and to this day none of them has a meaningful futures market. Cassava feeds an estimated eight hundred million people and has no exchange price at all. Maize is the one crop that lives in both worlds: it is a giant, deeply traded futures market in its industrial and feed use, and at the same time the daily bread of hundreds of millions who never touch a price screen. The pattern holds across the whole exchange: a crop becomes a commodity market when its value can travel, and stays a humble staple when it cannot.

So the next time a market map shows sugar trading in New York, coffee in London, cocoa on both, rubber in Shanghai, and palm oil in Kuala Lumpur, it is worth remembering that the map was drawn five hundred years ago, by the ships that moved these plants away from home. The commodities we price most heavily are, almost without exception, the foods that moved the furthest and put down roots somewhere new. They are native to nowhere, and that is exactly why they trade.
