Rye is the cereal of bad soil and hard winters. World production is around 11 to 12 million tonnes, eighth or ninth among the grains and roughly four tenths of one percent of world cereal output, and it is the most geographically concentrated crop in the complex: Germany and Poland together grow about half of it, and adding Russia, Belarus, and Denmark takes the North European Plain to roughly three quarters. That map is a soil map. It traces the glacial sands and acid podzols running from the Netherlands through northern Germany and Poland into Belarus and western Russia, ground that was too light, too acid, and too poor to give wheat a yield. Rye is the most cold-tolerant cereal there is, sends down a deep fibrous root that scavenges what little the sand holds, and will make a crop where nothing else will.

It is also the sharpest decline in the grain complex. World rye output was about 33.5 million tonnes in 1961 and is a third of that today, a 65 percent fall in absolute tonnage during six decades in which world cereal production roughly tripled. In Germany, winter rye was the leading cereal until 1960, planted on more ground than winter wheat; it is now a few percent of the arable area. Three things did it. Wheat makes better bread, because wheat gluten forms the elastic network rye's does not, so rye was never preferred, only afforded. Incomes rose, and northern Europe traded up out of its poverty bread. And decisively, fertiliser and agricultural lime abolished rye's entire advantage: once nitrogen and a corrected soil pH made the north European sands grow wheat, there was no longer a reason to grow rye on them. Russia, which converted its grain sector to export wheat after the Soviet collapse, is the extreme case, down to a little over a million tonnes.

What rye became is not what most people assume. The majority of the crop is fed to animals, not eaten by people. In Germany, the largest producer, roughly two thirds of consumption goes to animal feed and only about 15 percent to human food, almost all of that bread; the FAO put the world feed share above 40 percent as long ago as 2007 and the true figure is now higher. The engine of that shift is hybrid rye, first released in Germany in 1984 and grown on about 81 percent of the German rye area by 2014, which lifted yields enough to hold tonnage while the acreage fell away, and whose commercial pitch is the pig ration: rye is cheaper than wheat, its fermentable fibre is good for gut health, and it has been fed at inclusion rates up to 60 percent in finishing diets. In the United States the crop has an even stranger job. Cereal rye is the country's most common winter cover crop, accounting for 44 percent of cover-cropped corn ground against winter wheat's 27 percent, because it is winter-hardy, cheap to seed, and allelopathic: its residues release compounds that suppress small-seeded weeds, so it is close to a herbicide that grows itself. Most American rye acres exist in order to be killed before the cash crop goes in, which means US rye area and US rye production measure two different things.

No other grain carries a disease this deep in its history. Ergot, the fungus Claviceps purpurea, swaps the developing kernel for a hard purple-black body loaded with alkaloids that constrict blood vessels and act on serotonin and dopamine receptors. The gangrenous form burned and then killed the extremities, the convulsive form brought seizures and hallucinations, and together they were St Anthony's Fire, documented from 944 and severe enough that a monastic hospital network grew up around it. Rye is unusually vulnerable for a biological reason: it is cross-pollinated and open-flowering, while wheat and barley pollinate inside closed florets. The regulator still treats it as a special case. EU Regulation 2021/1399, applying from January 2022, capped ergot sclerotia in unprocessed rye at 0.5 grams per kilogram, tightened to 0.2 from July 2024, and gave rye milling products their own higher alkaloid limit on the stated grounds that the tighter level is not achievable in the highest-risk cereal. Two famous ergot stories deserve care. The Salem witch-trial hypothesis, published in Science in April 1976, was rebutted in the same journal that December and is rejected by essentially every working historian of the episode. The Pont-Saint-Esprit mass poisoning of August 1951, which killed seven people in a French town, is officially ergot but genuinely unresolved, and the widely repeated claim that the CIA dosed the bread with LSD has never been supported by any documentary evidence.

Rye survives on the plate because of chemistry that forces a particular kind of bread. Rye contains gluten proteins, but its high pentosan content stops them forming a network, and its alpha-amylase stays active at higher temperatures than wheat's, degrading starch during the bake into a gummy crumb. Sourdough fixes both: the acid inactivates the amylases and firms the pentosan gel that holds the loaf up, which is why a true all-rye bread is chemically obliged to be sour. That gives the rye belt its foods, from German Roggenbrot and Westfälischer Pumpernickel (referred to in print by 1450, protected under EU law, its darkness and sweetness coming from a steam bake of up to a day rather than from molasses) to Danish rugbrød, Nordic crispbread, and Russian black bread, and even to kvass, a lightly fermented drink made from the bread rather than from the grain. The spirit trade is the growth story. US law defines rye whiskey as a mash of at least 51 percent rye, and the style dominated American whiskey until Prohibition destroyed the distilleries and the aged stock; the craft-cocktail revival brought it back, with volumes up 1,275 percent between 2009 and 2019 on the industry association's numbers. Much of that rye is Canadian, which is why the United States is the world's largest rye importer by value while growing barely 300,000 tonnes itself. Poland and the Baltics distil rye vodka, Germany makes Korn from it.

And there is no futures market. That is not because rye never had one. The Future Trading Act of August 1921 named rye among the grains Congress moved to regulate, rye sat inside the federal speculative position limits imposed in December 1938 alongside wheat, corn, oats, and soybeans, and Chicago traders leaned on rye and soybeans through the Second World War when other markets were shut. Minneapolis began trading rye in 1918 and had the contract formally designated in 1923. Chicago rye appears in government listings into the 1960s and then quietly vanishes, and by the CFTC's register of designated contracts in 1998 the Minneapolis contract carries a single letter of notation: dormant, meaning designated for years and not traded in the past six months. The contract outlived the interest in it. Nothing has replaced it: there is no rye future on Euronext, none on the German exchanges, and none in Poland, the world's second-largest producer. Rye is priced instead by direct forward contract between grower, mill, distiller, and feed compounder, by surveyed cash quotations in Germany and Poland, and above all as a basis to wheat, with anyone needing a hedge selling Euronext milling wheat and wearing the difference. The US government does exactly the same thing: USDA's crop-insurance price for rye is derived from Chicago soft red winter wheat futures, because there is no rye contract to price against. Roughly a tenth of the crop crosses a border, two countries grow half of it, and the buyers all know each other, which is a fair description of why a contract will not come back.
